Tonight on Dinner Impossible . . .

Prepare a gourmet low-glycemic index vegan meal (with no wheat) for 8 people in one hour -- in my parent's extremely annoying kitchen. (It is annoying because of the shameful deficiency of actual cookware and spices).

Lentil soup

Cauliflower curry
Spaghetti squash (with dash of extra virgin olive oil and garlic)
Qinoa salad
Green salad with hearts of palm, celery root tomatoes and avocado

Fresh pears and dried figs

Went over well, even with the carnivores. A sinful amount of red wine substitutes for stock in the lentil soup, and turnip in addition to the parsnips give added flavor.
