The Economics of the McRib

Leaving aside the author's editorial comments about the awfulness of the McRib and the stupidity of McDonald's customers, this is an interesting piece on "why the McRib makes variable appearances." Basically, Pork is expensive for a fast food product. McDonald's therefore brings back the McRib whenever the price of pork offal drops to a level where it becomes profitable to sell the McRib. But because McDonald's demand is so high, the price of pork and pork offal soon rises dramatically, causing McDonald's to end the McRib offering.
